This glowing Moroccan vegetable stew is gently spiced with ginger, turmeric, coriander, and cinnamon, and is a gorgeous way to highlight a vegetable medley.

2 tsp olive oil
1 onion
2 cloves garlic
1/2 inch fresh ginger
1 tsp ground cumin
1/2 tsp ground turmeric
1/2 tsp ground coriander
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cayenne pepper
1 bell pepper
14 oz. diced tomatoes
3 cups sweet potato
2 cups turnip
2 cups cauliflower
1 cup carrot
1/2 cup golden raisins
2 tbsp fresh lemon juice
