Purple kale smoothie! A wonderful way to eat kale. We regularly have green kale smoothies, but now that I can find purple kale in our grocery stores, I’m getting the purple ones. Purple kale is known to have anthocyanins, which is what makes the kale purple. This is a type of phytonutrient that is said to have potential disease fighting benefits. 1 cup water
1 banana
1 large handful of purple kale (about 1.5 packed cups)
1 teaspoon truvia or stevia
1 cup mixed berries (i used an organic blueberry, blackberry, raspberry mix)
1 teaspoon vanilla extract
1.5 cups ice
Put ingredients into blender in the order listed. Blend for about a minute. Makes about 32 oz.
