Happy birthday to you! Celebrate your birthday (or any occasion) with these light and sweet carrot cake bites. They’re less work than a cake and more nutritious, too.

1 c. carrot pulp
20 fresh pitted dates (around 160 g or 5.5 oz.)
1/4 c. pecans, chopped
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. nutmeg
Dash of turmeric
3 tbsp. carob powder
