Simple, Delicious Black Beans

Need an easy side dish to go with tacos or enchiladas? Here it is! Simple and delicious!

1 T. extra virgin olive oil
1/2 medium yellow onion, diced
2-3 garlic cloves, minced
2 (15 oz.) cans black beans, one can rinsed and drained, the other with can juices
Salt and pepper to taste
1/4 c. cilantro, chopped
Saute onion and garlic in olive oil until soft, but not brown. Add black beans, salt and pepper and heat through. Just before serving, add chopped cilantro and adjust seasoning to taste. Enjoy!
