These Southern Stuffed Sweet Potatoes are loaded with onions, red pepper, black beans, hot sauce and garlic. This is a delicious gluten-free and vegetarian dish that is perfect for lunch or a light dinner.

3 medium sweet potatoes
1 tablespoon olive oil
1 small onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
1 14-oz can black beans, drained and rinsed
2 tablespoons hot sauce (your favorite)
¼ cup mayo
½ teaspoon salt (or to taste)
2 green onions, sliced thin
½ cup pecans, toasted and roughly chopped
