This is the healthier version of Potato Curry. Very easy to make and very fast.

Ingredients for Boiling the Sweet Potatoes

- Water to boil the sweet potatoes
- 2 tsp of salt to boil the sweet potatoes

Ingredients for making the sweet potato curry

- 2 Sweet Potatoes
- 2 tsp of EVOO for the curry
- 1 tsp of black mustard seeds
- 1 tsp of cumin seeds
- 3 tsp of cumin powder
- 5 small Curry Leaves
- 2 small Bay Leafs (optional)
- ¼ of a red onion
- 3 plum tomatoes
- ½ cup of unsalted Tomato Paste
- ½ cup of water to make the curry
- 2 tsp of shredded ginger
- 4 cloves of Garlic
- 2 Thai Chillies
- 2 tsp of red chilli powder
- 1 tsp of turmeric
- 2 tsp Salt
- A pinch of garam masala powder (optional)
- 3 tsp of brown sugar
- 3 tsp of Apple Cider Vinegar
- 2 tsp of Flax Seed Meal (Optional)
- Coriander for garnishing
