My motto is “Eat Foods with Lots of Colors” so if you are looking for a really simple salad, this Tri Color Salad is probably one of the most simplest salads that you will ever make. It has 5 ingredients and that’s it. (I don’t count salt and pepper). It’s not only simple, but really great and I know I have a lot of salad fans out there. Not only is it healthy, but it is pretty to look at. Imagine that? Something so simple that can make a really great presentation. It’s made with Endive, Radicch

1-2 small heads of Endive, washed and sliced in thin rounds
1 medium head of Radicchio, washed. rinsed and sliced thin
1 (10 oz) bag of baby Arugula (rocket lettuce), washed and drained
4-6 tbsp. extra virgin olive oil
2-3 tbsp. red wine vinegar
salt and pepper, to taste
In a medium glass bowl add the vinegar, olive oil, salt and pepper and let stand for about a half hour so the flavors can melt together. In a large bowl add the endive, radicchio and arugula and toss. When...
