Fake Lazy Stuffed Cabbage

So easy to make and totally fake! Don't bother rolling, just mix, layer, bake, and serve - this fake dish is real delight!

6 large cabbage leaves
6 oz (1/2 package) Tofurky Ground Beef Style
1 cup cooked quinoa (red or white, to taste)
1/2 cup grated carrots
2 garlic cloves, squezeed
1 oz raisins
1 tbs cilantro (fresh or dry)
1/4 ground walnuts
1/2 cup diced tomatoes
1/4 cup red wine
1 tbs Agave nectar
1/2 tsp cinnamon
To taste salt
To taste pepper
Tofutti Sour Supreme for garnish
To get 1 cup of quinoa, cook 1/2 of dry quinoa in 1 cup of water for 15 minutes or until water is fully absorbed. Meanwhile, steam or parboil cabbage leaves until soft. Drain and let cool. Prepare an 8" baking dish by spreading 1 tbs of diced tomatoes evenly on the bottom. Lay out two cabbage leaves to cover the bottom fully. In a mixing bowl, combine Tofurky ground beef, cooked quinoa, carrots, raisins, garlic, walnuts, cinnamon, and cilantro. Add salt and pepper and mix well. Spread half of the mixture over cabbage leaves. Cover with the second layer of cabbage leaves, then the rest of the filling mixture, and the final two cabbage leaves. Stir the remainder of diced tomatoes with wine and agave nectar, pour over the top. Cover tightly and bake at 350 for 30 minutes. Makes 4 servings. Garnish each serving with Tofutti Sour Supreme. Enjoy!
