This low carb Greek healthy broccoli salad is so creamy you’ll never know it’s vegan and paleo friendly and whole30 compliant! It’s an easy, healthy side dish that’s perfect for spring potlucks!

1 Cup Raw cashews, soaked in water overnight (140g)
6 Tbsp Water
2 Tbsp Fresh lemon juice, (don\'t use from the bottle)
Zest 1 whole medium lemon
1 1/4 tsp Dried oregano
1 tsp Fresh garlic, minced
3/4 tsp Sea Salt
3/4 tsp Dried basil
3/4 tsp Dried thyme
Pinch of pepper
For the salad:
5 Cups Broccoli, chopped into bite-sized florets
1 1/2 Cups Cherry tomatoes, halved
1/2 Cup Pitted Kalamata olives, halved
6 Tbsp Red onion, diced
1 Large cucumber, halved and thinly sliced
