Simple, easy, 30-minute veggie soup! Hearty, satisfying, tasty and healthy, providing 3 servings of veggies per portion!

1 Tbsp of oil (I used sunflower oil)
1 onion
1/2 big sweet potato
2 big carrots
1/4-1/2 head of broccoli (about 1 cup)
3/4 cup of corn kernels (fresh or frozen)
27 oz (0.8 L) of water
1 tsp salt
1 vegetable broth cube*
2 Tbsp tomato paste
1.2 cups (0.3 L) tomato puree
3 tsp brown sugar
1/2 small lemon, juiced
1/2 avocado

* You can substitute this with 1 cup of liquid vegetable broth. Substitute this for 1 cup of the water content, if you use liquid broth (only add 2.4 cups of water then).
