Here is a perfect gift to give when going to holiday parties, my Homemade Italian Giardiniera! enjoy!

1 green bell pepper, diced
1 red bell pepper, diced
1 orange or yellow pepper, diced
3 fresh jalapeno peppers, sliced ( optional if you want it hot)
3 celery stalk, diced
2 medium carrot, diced
1/2 small onion, chopped
1 1/2 cup fresh cauliflower florets
1/2 cup salt
water to cover
3 cloves garlic, finely chopped
1 tablespoon dried oregano
1 teaspoon red pepper flakes
1/2 teaspoon black pepper
1 cup white vinegar
1 cup extra virgin olive oil
(you can also use pickling spices)
