This is a wonderful simple recipe to keep in your cooking repertoire! My hubby's mom makes this recipe. She uses chicken broth, but vegetable broth can also be used for a vegan option. It is a very simple and inexpensive recipe! Yet, the potatoes are delicious and healthy without the extra calories. You don't need lots of butter and dairy to make delicious mashed potatoes! Try this recipe!

3 pounds potatoes (russet gold potatoes if you don't want to peel them)
1 1/2 cups of chicken or vegetable broth (vegetable for a vegan dish)
2 cloves garlic (optional)
salt to taste
Boil the potatoes. Let cool and peel. Mashed the potatoes in a big bowl. Gradually start adding the broth while stirring. Continue the process until mixture is smooth. Add the optional garlic. Add salt to taste. The broth quantity may vary slightly depending on how thick you want the mashed potatoes to be.
