Organic Romaine & Radicchio Salad on a Bed of Roasted Beets with Lemon-Walnut Vinaigrette

Nice Fall salad that is fairly straight forward to prepare, is colorful and full of crisp flavor. This is our signature salad dish on the Fall menu at Johnnie Organic Bar & Grill and our returning customers are always happy to see us bring them out. It is sugar-free, so it has a wallop of citrus while the sweet roasted beets help bring the flavors all into balance. It is best when ingredients are fresh and organic, thus it makes a great Fall dish when the ingredients are in season.

2C Romaine (about 1 head)
3/4C Radicchio
1 Lb prepared Roasted Beets
2 Tbsp Lemon-Walnut Vinaigrette
1 - 1/2 oz Goat cheese (Omit or use alternative if Vegan)
1/4 C Walnuts
