Rosemary Broccoli Quinoa

This is a yummy and filling quinoa meal or side dish.

1 cup rinsed and drained quinoa
1 small head of broccoli
1 large tomato
1 TBSP olive oil
1/2 TSP rosemary
Bring 2 cups of water to a boil. Cut broccoli florets off and discard stem. Dice tomato. When water comes to a boil, add quinoa and broccoli. Cover and turn heat to medium, stir occasionally. After about 10 minutes, add tomatoes. Cook another 2-5 minutes, or until water is absorbed. Remove from heat. Stir in olive oil and rosemary. Serve warm or cold.
