Colorful Lentil Soup

Meatless but hearty, full of vitamins and veggie goodness, this soup could be made stove-top or in a crock pot. Quick and easy, it\\\'s a winner!

1 lb dry lentils
2 quarts water
1/2 cup beet juice (drain a can of beets or boil fresh beets and drain them; reserve beets for a variety of salads)
1/2 cup grated carrots
1/2 cup diced tomatoes
2 cloves squeezed garlic
2 tbs fresh or dry parsley
1/4 tsp cinnamon
To taste salt
To taste pepper
Mist frying pan with oil. Sear garlic with carrots. In a crock pot or stove-top pot, assemble all ingredients, including garlic and carrots. If using crock pot, put on high for 30 minutes, then turn to low...
