An excellent one-pot meal, this yummy Mexican quinoa recipe is a hearty flavor-packed meal. A one-pan Mexican food idea that is light and a delicious meal for a busy weeknight.

Quinoa is gluten-free and high in protein, and one of the few plant foods that contain sufficient amounts of all nine essential amino acids. Quinoa has a natural coating called saponin. This natural coating can make the cooked grain taste bitter or soapy. It's easy to get rid of by rinsing the quinoa just before cooking. Other cookbooks suggest soaking it overnight to remove the bitterness.

1 tbsp olive oil
2 cloves garlic
1 jalapeno
1 cup quinoa
1 cup vegetable broth
15 oz can black beans
15 oz can fire-roasted diced tomatoes
1 cup corn kernels
1 tsp chili powder
1/2 tsp cumin
